Amazingly, I actually hate vegetables. I had to get very creative when I was vegan to eat my vegetables. So I got creative. This recipe however I was making for a long time. This is how I got creative getting my daughter to eat vegetables. This is cauliflower mashed potatoes. Very very simple recipe and it taste really good.
- 1 head cauliflower broken into pieces and boiled until soft
- 1 onion peeled and boiled with cauliflower
- 1/4-1/2 cup milk or almond milk you can even use vegetable stock
- Salt to taste
- Optional butter
- After cauliflower and onion are boiled, place in food processor or blender with the milk and blend. Add salt and butter if you’d like to taste. That’s it!!! Add less milk to make it more thick. Delicious and easy. You’d never know it was cauliflower.
