Vegan thousand island dressing in my aerogarden salad

I had a dream last night I ate a chicken sandwich. Of all the animal products I stopped eating, chicken is the least missed. I hate chicken. I’ve lived my whole life on a diet and chicken or fish were always the lowest calorie protein. Chicken was the least expensive. I’ve had enough of chicken. I even worked in chicken restaurants, Boston Market, and Ranch 1. I hate chicken. If I was going to eat something, let it be a hamburger. Ok, now that that pointless fact is out of the way. Last night I made a ginormous salad from my aerogarden.

When I was in Florida for the week,,my lettuce grew like a weed and my mini tomatoes started to ripen. So I pruned and plucked added some carrots and made a vegan thousand island dressing and viola!!!!

Look at all that. Except for those orange carrots, that was all homegrown in my aerogarden. Pretty cool. The thousand island dressing was awesome and so quick to make. I found the recipe on Flipboard http://flip.it/hlYkD7 which is one of my favorite sites to get recipes from, as well as information on multiple sclerosis. The recipe comes from a site called Create Mindfully http://Www.createmindfully.com  I haven’t really checked out the site yet but it looks like my type of place.

VEGAN THOUSAND ISLAND DRESSING

INGREDIENTS

1/2 cup vegan mayo – or 1/4 cup vegan mayo + 1/4 cup unsweetened plain coconut yogurt
2 tablespoons ketchup
3 tablespoons sweet pickle relish
3 teaspoons hot sauce – I used green jalapeño
1 tablespoon unsweetened plain almond milk (optional)

INSTRUCTIONS

Mix all ingredients until well blended.

Can’t get easier than that. Technically I try to follow the plant-based diet, which doesn’t use oil, but I hate the salad dressing. I just can’t do a salad with a dressing made mostly on vinegar. So I made the exception on the salad dressing staying vegan but allowing for a product made with oil (the vegan mayo). Regardless I know it’s still healthier.
